Steamed Pears with Ginger & Malt

  • 1 per person Medium Pear
  • 225 ml Fresh Apple Juice
  • 1.5 tsp per pear Grated Root Ginger
  • 0.25 tsp per pear Barley Malt Extract
  • 1 tsp Cinnamon
  • 1 pinch Sea Salt
  • 1 dsp Kuzu or Cornflour
  • 1 squeeze Lemon Juice

Steamed Pears with Ginger & Malt Directions

    1.              Place the pears in a pan with the cinnamon and add enough apple juice to just cover the fruit
    2.              Put 1 tsp of barley malt extract into each hole where the cores were removed
    3.              Grate the ginger root and squeeze 1/2 tsp of juice onto each pear half
    4.              Sprinkle the pears with a pinch of salt, add the lid and steam for 10 minutes or until the pears are soft
    5.              Remove the pears to a bowl
    6.              Mix the Kuzu with enough cold apple juice to form a thick pouring consistency
    7.              Add the Kuzu mixture to the sauce and bring to the boil, stirring continuously
    8.              Add a squeeze of lemon juice to taste (optional)
    9.              Pour the thickened sauce over the pears and serve warm

Recipe notes

I recommend using pears that are only just ripe otherwise they can overcook and become too soft. Best served warm with natural yoghurt (soya or dairy) or with a little nut cream or crème fraiche for a more indulgent dessert.
